I'll be there for a conference next week, and go:
Stay away from Pats and Genos. 2 best options - Tony Luke’s or Jim’s at 5th & South.

Or just a cardiologist’s worst nightmare? I open to the former and more than willing to give it a go.

Head to 10th and Wharton for the experience (Pat’s and Geno’s). Otherwise hit Jim’s or one of the other recommendations.
... Old Philadelphia is a great spot. As is the area around 2nd and Lombard, just south of that area.
Dozens of great restaurants in town.
Talula’s Garden near Washington Square Park is always top notch.
If you around Rittenhouse Square, I like 20 Manning.

But the only real way to tell is to get one at Pat's and then go across the street and get one at Geno's.
Jim's gets a lot of votes too, as does Dalassandro's, which if I remember right is in Manayunk or Roxborough or somewhere.
(Shaved rib eye). These two items are absolutely crucial. Any decent provi cheese or whiz if you like that will work. Black skillet heated real hot with just a leetle canola oil. Cheese has to be melted on top of the steak which will cook real fast. I don’t heat my rolls. Some do. Fucks up the perfect chewiness in my view. Fry up yer onions in a separate small pan. Right onto the roll from the spatula and into your mouth. I only use salt and peeper to season. Serve with sauce or ketchup.
There is also Tony Luke’s, Geno’s, and Pat’s (the original place) all in south Philly. TL’s also makes the best pork sandwich, another Philly specialty.
Plus, whomever you are with or wit as they say there will have their own favorite. Plenty of holes in the wall that are just great. If you get a recommendation, you won’t go wrong.
Also, South Street is funky and fun on its own just to stroll down.
The Reading Terminal Market is great - I had the best pretzel of my life there. And the pork sandwich.

Near to where I grew up and the steaks are really good.

I seem to remember Pat's being better than Gino's, but those are the two touristy ones that you go to for the experience. The locals will know better places.
