I grew up on a lot of bad BBQ with great sauce...but I didn't know it.
Then, I moved to Texas, and I had a lot of great BBQ. Each place had very different sauces (one was more a vinegar broth, but still spectacular).
I still love a good sauce, but: Good sauce won't make bad BBQ great BBQ. Good sauce will only make bad BBQ edible.
