The three counties with large meat packing plants are among the four counties in Kansas with a majority Hispanic population. Grant, the fourth county with a majority of Hispanics, is also in southwest Kansas, but has several vegetable processing plants rather than a large packing plant. The employees at the meat-packing plants in these three counties comprise about two-thirds of the total employees of meat-packing plants in Kansas. The majority of workers at meat-packing plants are foreign-born Hispanics. Nationally, 66.8 percent of meat-packing employees are Hispanic and 56 percent of all workers are foreign-born.[12] By contrast with the heavily Hispanic and foreign-born population of the Golden Triangle counties, Hispanics make up only 13.02 percent of the total population of Kansas.[13]

They almost all use E-Verify, which provides a rebuttable of not knowingly employing those without work authorization.
Even if they were foreign born, most will have work authorization from either H-2 Visas, or EADs while their Asylum/Refugee cases are pending.
Likely not "target rich"
experiences laid out in the Texas Tribune article I've circulated a few times, I question the 'purity' of employee documentation in either state, or any other that is heavily dependent on Latinx labor.
I've also posted testimony from Latinx workers at multiple Trump facilities...including Mar-a-Lago...where there was no "deep dive" into the veracity of such workers' documentation status...otherwise they'd be yawning over Trump's threats.
Again, I suspect that all of DJT's ICE raids will be focused on Blue States, Localities and Businesses...with the possible exception of a Republican who won't bend his/her knee to him.
