I’m trying to go as simple as possible. Gonna make a fruit-based stuffing and roast it.
Also roasting potatoes in the fat, natch.
Start a bit earlier than you may think you need. I've found that when doing a new cooking process for a full meal, something takes longer every time (the oven takes longer, stove availability is an issue, a side becomes more complicated, etc.).
That would be all I'd add. Sounds like you are on it.
Making four batches today for our holiday open house. Most people who come don't even like me, they just love my whiskey sour slush.
Goose sounds worse than turkey, if that is at all possible.
