I don't think you should use the Olympics as a barometer of what to expect as it relates to football

Yes they were scheduled not long before the kickoff of the 2020 season, but the Olympics are apples and bowling balls compared to CFB.
You're talking about planning to bring in people from 150+ countries into once space without knowing what the pandemic will look like in the months to come. It's not something you can make a last minute call on. They're forced to make a decision now.
Not that football games/seasons don't require a massive amount of coordination, but it's easier to pull off than the Olympics. They have more flexibility on tweaking schedules, etc.
