What's with all the snaps going over the QB's head?

I've watched several practice videos, and in all of them I've seen the snap going over the QB's head?? Fortunately in every clip I've seen, the QB was able to jump up and get the errant snap. Aside from the chance of a disastrous fumble, even if the QB jumps up and get the ball, the play timing is off. It's happened over the first few days of practice (ion the videos I have seen) and keeps happening. I'm wondering why they don't get that fixed? IMHO, that's a 'Hair-On-Fire' emergency! Thoughts?
