If ND goes 11-0 and loses the ACC Championship, do we count it as an undefeated season?

At least in terms of a "regular season."

I don't believe illusions because too much is for real.

Nope, a conference championship is part of the regular season conference schedule.

I'd say no. To me, post-season is bowl games and playoffs

It's part of the conference schedule, if only the "top" 2 teams. But I guess it doesn't really matter.
