Shouldn't he have two?
2021 will be his 4th year playing out of 5, won't it? And with the NCAA giving everyone a free extra year of eligibility, why can't he also play in 2022?

You don't get an extra year of eligibility. Just that 2020 does not count against one's eligibility.
Whether he played in 2020 or not, he still has one year remaining to be taken, presumably in 2021. What the free year did give him is the option to redshirt in 2021 if he happens to get injured this year before playing in more than 4 games. If that were to happen, he would then be able to play in 2022.
From an eligibility standpoint, it's as if 2020 never happened for any player.

I think it is that 2020 “didn’t count” against eligibility. Coan had one year left going into 2020.
He still has one year. Pretty sure.
